Chocolate & Mocha Together

We all have our favourite fixes it is either coffee, cheese,chocolate, peanuts almost anything. What happens after you have had that fix or blowout? you immediately say I shouldn't have had that, well we are only human.

My favourite fix is Chocolate Cake with Mocha frosting it certainly is not on any diet sheet that I know but so yummy. Just picture a rainy day curled up on the sofa with a slice of cake a cup of tea and a good book,what could be better. You will find this a nice light cake and keeps well in air-tight container.

Ingrediants:

2 cups of light brown sugar

1⁄2 cup butter

2 eggs beaten

1⁄2 cup sour milk

1⁄2 cup warm water with 1tsp baking soda dissolved in it,

2 cups of flour sifted with 1⁄4 tsp baking powder

2/3 squares of melted dark chocolate

1 tsp vanilla essence

Method:

Pre-heat oven 350deg/175f

Grease two 9inch round cake tins

Cream butter and sugar until light and fluffy, add eggs, then milk, water and flour, alternate flour and liquids to prevent curdling beating each time until smooth. Add vanilla essence and chocolate mixing in well.

Divide equally into your 2 cake tins and bake for approximately 1/2 hour until cooked. Test with tooth pick or skewer to see if done. If they come out clean they are done, if still sticky put back into oven for another 5minutes.

While cake is cooling make the Frosting:

Frosting:

3cups of confectioners sugar

3 tbls softened butter

6 tsp dry cocoa, few drops of vanilla

Cream 3 cups of confectioners sugar, with 3 tablespoons of softened butter. Add 5 or 6 tablespoons of strong coffee while creaming. Then gradually add 6 tsp of dry cocoa and a few drops of vanilla.

When cakes are cooled place one upside down and spread the frosting evenly over the sponge,then place second sponge on top.

Drizzle with icicng sugar:

Alternative:

Try putting a coconut frosting inside instead, not only does it look good (chocolate & cream) but the two flavours are so different but work well together.

Method:

As above but instead of the Coffee and Cocoa add 4 to 5 tablespoons of desicated coconut, still add the few drops of vanilla for that fresh taste.

You could even spread some Strawberry or Apricot jam on first for that special Sunday treat! or any other day if you like.

Drizzle with icing sugar.
